Hallo genks ! I don't think I've been in semester five and tihs is first day I back practic after doing on the job training, on this day precisely on Tuesday August 7 2018 and today we already divided consist of 8 groups for daily activity practic. so today the practice we do is make tartlet or sugar dough and my groubs get a share for make cheese cake.
ingredients for sugar dough :
300 gr flour
2 sdm milk powder
160 gr butter
2 btr egg
1/4 sdt salt
1 sdm icing sugar
ingredietns for filling :
600 gr cream cheese
100 gr sugar
2 sdm flour
2 btr egg whole
2 btr egg yolk
80 gr heavy cream
2 tsp lemon zest
for froasting :
160 gr heavy cream
20 gr symple syrup
6 gr gelatin
2 tsp basil seed
how to make pie cheese cake.
sugar dough :
1. prepare all ingredients to be used.
2. do it metode scalling.
3. add flour in bowl which will be used to mix the dough
4. mix all dry ingredients ( milk powder, salt, icing sugar )
5. mix until mix well
6. add butter and egg mix until mix well.
7. rolling the mixture evenly with a thickness of approximately 1 cm.
8. In Put in the chiller for about 10 minutes.
9. moulding the dough.
10. bake the dough with a temperature of 165 degrees celsius in a brace of approximately 10 minutes
( half-baked )
11. spread the mixture with egg wash (egg yolk + fresh milk)
12. Bake back the dough with a brace of approximately 10 minutes.
13. Be sugar dought.
