Today I was given the assignment with my friend to make Surabaya, who doesn't know the Surabaya layer ...? This one cake is so much obtained in some areas especially in the area of Surabaya.

Spikes, in general, spikes, also called Surabaya, spikoe, Surabaya sponge, Surabaya layer cake, lapsur, mandarin sponge, speckle and spekkoek. is one type of traditional wet cake from Indonesia. This cake was first developed in the Dutch colonial period in Indonesia which was inspired by European layer cakes. My name comes from the Dutch language Spekkoek. The distinctive feature of Spiku display is having 3 layers. The basic ingredients for making are egg yolks, flour, sugar, and butter / margarine mixed with spices such as cardamom, cinnamon, cloves, nutmeg, and anise so that they have a distinctive aroma of spices. Along with its development, the ingredients to make my sponge experience innovation so that today there are many variations of my spicy flavor. The spike is different from lapis legit which is very visible from the appearance, if the sponge consists of 3 layers, the lehgite layer consists of many layers.

Lapis Surabaya, Lapis Surabaya is another name for my spike. It is called Lapis Surabaya because my sponge has become a typical cake in Surabaya as well as to distinguish it from lapis legit. (source: wikipedia.com)
